I'm sure its been gone over several times , but what is a normal stall rpm for a th 350 in a bucket?

I'm not going to recommend a stall speed, since I don't know what your engine idle rpm
will be. Also it depends on your camshaft and weight of the car will be and then it's only
an educated guess. Your opinion will most certainly be different.

Need more hard data to make an educated guess !!!

There are people here running 2200 RPM - 3200 RPM stall converters, pretty much all of them are satisfied with what they have, and most are on their second choice. I would say get a 2500 RPM stall and if you are fighting it at stop lights go to a 3000, but there will be lots of other opinions. I run 3000 RPM stall converters in all my hot rods, your mileage may vary.

Stall speed depends on idle speed and engine torque; the numbers given by manufacturers are SWAGs. That said, I like the B&M Holeshot 2800 I use now with my mild SBC and TH400. Note that TC slippage goes up with stall speed, so you don't want to go too big, making a lot of heat and losing mileage.
