I'm getting a crate or rebuilt SBC 350 for the T. Now, is it my choice for a flex plate? I know they have different teeth count, so which one am I suppose to use? Does it have anything with being a 4 bolt main, or 2 bolt main?

Yes as said the tooth count on the flexplate has to match the starter. 2 or 4 bolt main doesn't make a difference.
 
The starter mounting holes on SBC come in two flavors.

If the mounting holes are directly in line and perpendicular to the flexplate, and you intend to use a stock GM starter, you will want a 153 tooth flexplate. If you intend to use an aftermarket mini starter, flip a coin as the flat mounting block will have two bolt patterns on it, to move the starter in for the 153 tooth or out for the 168 tooth.

If the mounting holes are staggered, you'll use the 168 tooth flexplate.
