200 is not hot enough to worry about. With a 7 lb cap you should not reach boiling point until 215 to 218 or so. On the hottest day here in Houston I only see 210 and at night it drops back down to 185. No worry.

My old shorty brass radiator would see between 225 and 240. Then I would worry.
 
I have a Walker T radiator in my car with a spal fan and it stays right on 180 even when it is 100 F out here in south Louisiana. Of course my T has a small block Ford and they are just plain cooler to begin with. JK

I know this sounds like a broken record, but if you are on the edge or want to get more from you system, add a bottle of Water Wetter. It is not a fix all, but will improve the cooling. Read the directions.
 
railroad has a point about Water Wetter. It does seem to knock down the temperatures a bit.

200° isn't out of hand. Remember, power comes from heat. Most of the OEMs have been using 195° thermostats for years, trying to wring out as much fuel mileage as they could. Stay atop your jetting, as the higher temps will leave you a lot less cushion before detonation, but that's the sweet spot where most motors are the most efficient.

Hahahaha.........thats good! I like that! 200 isn't all that hot, not with the fuels today and the motors the way they are! I prefer to run cooler, but since theres not a whole lotta load one these motors, as long as you cooling systems OK, your timings set where it needs to be, and your not running lean......you'll be fine.
When your gauge hits the 220-225 mark, raise your eyebrow like Spock, and don't take your eye off it. 225 on up....somethings wrong.
Most cars will run in the 190-215. With the Hi flow water pumps and the non-water coolants coming out, and the hi-flo thermostats, and electric fans, theres no reason for anyone running hot, unless your trying Smokeys 'Lean Burn' projects to get your egt temps & your milage up...... Dawm I miss him.
