Just put the 5 Qs of oil in my motor today. Checked the dip and it only went up to the Add line.

Just had engine rebuilt, new oil pan and dip stick.
Dip sick goes in smooth.
Nothing leaked out.

Maybe it just needed to sit a bit. I'll check it again tomorrow.

what motor alot of new ones take 6 quarts.

If you check it later and it indicates Full, bear in mind it is being very lazy returning oil to the sump and consider adding extra oil to make up for it. Particularly if you're one of those fellows that got suckered into using a high-volume oil pump.

what kind of oil pan you got? Don't forget the filter takes almost a quart.

5 qts, 4 qts in da pan, 1 qt. in da filter.

Yes, IIRC, the filters are for truck applications and are twice as long as standard filters. I don't think oino has that type of filter. If there are no chassis limitations, then they offer twice the filtration. I'll bet there is a mix up with either the dip stick or the dip stick tube. Maybe the stick is not seating completely.

No it is.
It is a new one, But it looks just like the old one.
I got the old one at o'reilly in Cali. and the new one at speedway here in Lincoln.

After you check everything, and if you don't find a problem, and you did add one of those $49 dress up kits with the valve covers/ timing cover, pointer, breathers, and aircleaner.....see if it were made in china.
If so, just for giggles.....get a stock ordinary junkyard dipstick from the same motor....and try it and see where the level is.
I've seen levels move like that but were usually cause by someone putting on one of these blocks that go into the side of the block to hold the dipstick or the side of the pan, you know, one of those kits, a change in oilpans, as was suggested....a extra-large oil filter... or a cheap dressup kit.

If your motor holds 4 quarts, a quart in the filter, you should be on the full. If you have a 5 qt motor, that'll be 6 qts should show fill. OH, if your running one of those cheap cheesy dressup kits, do yourself a favor,....run a normal dipstick in it...the chrome has a tendency to come off and fall into the oilpan. Why the hell the morons chrome the dipstick anyway????

And also check and make sure your dipstick tube is driven all the way in.....
