The next one I build for myself will have a recess foot well. My '27 is not channeled, so I get the benefit of a few extra inches on a channeled body, but I have seen several '27 that have creatively lowered their floors. I would start with the frame following the body line as close as possible than lowering the floor to the bottom of the frame or more. my '27 has a frame rail cover that is 6" deep, so I could actually lower it more than that if I could pull it off with the right floor support--much like a corvette. Yes, the tranny gets in the way, but dropping the floor a few inches makes a huge difference on feeling like I'm "sitting in the car" or "sitting on the car". I do have a MC that is under dash, and that does clear up some space. Again, Its all personal preference and I'm pretty happy with mine now, but I'm always thinking of ways to make the next one better!
